July 25: Watermelon and Feta Cheese

Yes, I did fall off the face of the earth. But I have crawled back *smile*. I have been trying new things in my absence from the blogosphere, but those are moot points. Life is stressful but good. Recently, it has become much better with a bevy of fruit either still in season or just coming into season. I am taking a break from eating Pacific Northwest cherries, which I find quite enjoyable. The few times I have had fresh cherries they were tart but for $1.99/lb, I thought I would give them another try. What’s even better is that chipmunks and squirrels love cherries, so I toss them the bruised and stemless ones that I don’t eat.

Anywhoo, so what about this watermelon and feta cheese? I was browsing through Shape and saw that they added feta cheese and basil to create a watermelon salad. I did not make any effort to follow the recipe, though it looks delicious with additional ingredients like lemon juice (brings out the sugar from the melon even more!) and red onions for extra crunch. I just sprinkled some feta on cubed melon and my taste buds just had orgasms. What’s better than just being sweet? Being sweet and salty. Think chocolate covered pretzels, peanut butter and chocolate *sigh*. Watermelon and feta cheese did not disappoint! It was so good in fact, I think I shall actually make an attempt to prepare the watermelon, feta, and basil salad as written. It’s a great snack or side dish to beat this heat!
